A limited production of
“Il velo bianco” is a white sparkling wine produced with Pinot Grigio grapes, a universally known international grape variety. The sparkling wine method is called ancestral because it is an ancient method: fermentation takes place in the bottle as for the classic method, but the sugars used to start the bubble formation process are those naturally contained in the grapes. Unlike the traditional classic method, disgorgement is also not carried out, but the yeasts are left in the bottle and the wine is slightly cloudy. Hence the veiled effect of the wine, which also explains the name ‘velo’.
The label shows wild lilies, which grow spontaneously in the farm between the rows of vines and have multiplied especially after the conversion to organic production, finding a clean environment free from herbicides.
Lilies are white and are the symbol of purity, sometimes used in wedding bouquets or depicted in the ancient family crests of the Middle Ages, signifying ancient traditions and unspoiled nature.
